I'm interested in finding restaurants in New York City and Northern New Jersey that make authentic spaghetti carbonara with eggs, not cream and pancetta. This is not as easy as you might think! Please post any fabulous restaurants (and recipes, experiences and pictures) you may have. Graci!!!
Can you tell the difference between bacon and pancetta in spaghetti carbonara?
Recently tried my luck at a pasta place in Montclair, NJ Mama Giolla's. They only prepared it with cream and it was not good. I can't believe how hard it is to find a place that makes authentic carbonara. The restaurant recently closed.
